Sombi : senegalese dessert

The rice pudding is prepared on many occasions in Senegal : for the kids as a snack, because we want a fast and cheap meal, or because we want a great little dessert that can be simple but also very sophisticated.

In Senegal this very delicious dessert is called sombi, and it is prepared with milk and cottage cheese (often called curd).

In France the recipe for rice pudding can go from simple to more sophisticated with more fruits, vanilla, chocolate, etc.

I propose here a simple basic recipe, which you can then embellish with the ingredients of your choice.

To succeed this recipe, the first secret is the good choice of rice: round rice that does not break when stirred.

Then to make the rice creamy and unctuous, it must be perfectly cooked (not too much, just enough) and decorated with a lot of cottage cheese, and a little milk or liquid cream.

You can also choose to cook the rice in liquid milk. But since the milk heats very quickly, it is necessary in this case to monitor the cooking frequently. Another disadvantage in this case is that there is a lot of foam that forms on the surface. Personally I prefer to cook the rice in water the time necessary Then add the milk in a second time because the rice always ends up absorbing it and thus having taste.

Here is my version of rice pudding (or sombi). I hope you will enjoy it :

Ingredients :

100g of round rice, a pinch of salt, sugar (about 5 tablespoons), 3 sachets of vanilla sugar, 10cl of unsweetened condensed milk, 1 tablespoon of orange blossom, a knob of butter, a small pinch nutmeg, a pinch of cinnamon, 100g of white cheese (curd).

Preparation :

Put 40cL of water in a pan. Add the rice.

Cook over medium heat for about 20 minutes until the water is completely absorbed.

Add the knob of butter and a small pinch of salt. Mix and remove the pan from the heat.

Add the condensed milk, cottage cheese, sugar, vanilla sugar, a pinch of nutmeg powder and cinnamon and the orange blossom.

Mix well.

The rice pudding is ready.

Service :

You can enjoy rice pudding immediately while it is hot. You can also let cool and cool for 30 minutes to 1 hour before tasting.
